We serve a contemporary menu which changes on a regular basis. All our food is made in-house from scratch with only the highest quality fresh and seasonal ingredients from some of the best suppliers in the UK.

HG Walter

HG Walter is an independent family-run butcher who have become one of the UK’s most respected butchers. The meat they supply us is predominantly sourced from small farms rearing free-range native breeds, by farmers who see sustainability as a priority . It has built its reputation on doing things the right way — even when it's harder. From salt room ageing to native breed sourcing & whole-carcass butchery.  

Their grass-fed beef is either Aberdeen Angus or Hereford from Norfolk & Suffolk in the UK, or Wexford County in Ireland. These native breeds have stood the test of time, their hardy nature allows them to withstand the UK's climate, allowing them to roam free on its pastures with very little human interference. Beef is selected for its marbling and fat cover, and they dry age their prime cuts in a custom made Himalayan salt chamber.

All chickens, Cornish Reds and White Cobbs, are reared on small-scale British farms.

Lamb is free range & comes from Launceston in Cornwall and the West Country to the highest welfare standards. Their most common breed is a Suffolk Texel cross.

Their main pig breed is a Large White, known for its adaptability &  robust health. Originating in England, the breed was developed to thrive outdoors, with a dense & resilient coat ideal for varied weather conditions. The pigs are free-range & spend their whole lives outside, overlooking the South Downs & the Brighton coastline. They are fed on a natural diet, free of growth promotors or growth hormones, that consists primarily of cereal (wheat and barley), with minerals and vitamins making up the rest.

Chapmans of Sevenoaks

Chapman's are registered as First Buyers, meaning they're allowed to buy direct from fishing boats. Chapmans vans end their delivery runs at the coast, where they collect local fish straight from the nets to be used for the next day's delivery; dramatically reducing food miles & our carbon footprint when compared to a centralised delivery structure.

Chapman's own fleet & daily collections mean they are intimately involved with the local fishing community on the Kent and Sussex coasts & actively support them by paying fair prices promptly. These relationships mean they have at our disposal an intimate understanding of seasonal runs, & up to the minute awareness of quota allocations.

We share a focus on using responsible sourcing as much as we can, we can trust that they value fish enough to ensure it is here to stay. All their catches are traceable to port & even to the individual named boats. In instances where items are not available locally, yet in a lot of demand from customers, they will buy fish from the markets.

Shrub

Farmers first - Shrub partners with over 50 specialist farms, collaborating on annual crop & planning to ensure reliable supply & long-term commercial viability for growers.

Shrub champion the best of British produce. Unlike other wholesalers their growers dictate produce availability so if it's not in season, not quite ready or up to scratch, they won't supply it.

Shrub Source produce directly from a fully-traceable network of growers who implement ethical & responsible farming practices to optimise natural ecosystems & increase land resilience.
